Bucatini with Atlantic horse mackerel, dried fruit, olives, citrus and breadcrumbs

Ingredients for 4 people
  • 14 oz PGI Gragnano Bucatini
  • 17 oz Atlantic horse mackerel
  • 1 oz raisins
  • 1 oz pine nuts
  • 1 oz black olives
  • Breadcrumbs
  • 1 lemon
  • 1 orange
  • ½ red onion
  • 4 tbsp EVO
  • to taste Wild fennel
  • to taste Salt and chilli

PREPARATION

  1. Finely chop the onion and sweat it in a pan with abundant oil and chilli. Add the cleaned and frayed mackerel fillets, the raisins previously soaked, the pine nuts and the olives. Cook over medium heat for five minutes, by mixing occasionally. Add some minced fennel and some salt.

  2. Cook Bucatini into abundant salted water, drain it al dente and blend it in the pan with the sauce. Plate and garnish with toasted breadcrumb, fennel and grated citrus peel, then serve hot.
