Mezzi Canneroni Rigati with broad beans and peas

Ingredients for 4 people
  • 350 g PGI Gragnano Mezzi Canneroni Rigati
  • 200 g Broad beans
  • 200 g peas
  • 50 g Bacon
  • 1 Onion
  • 50 g PDO Pecorino Romano cheese
  • to taste Vegetable broth
  • 60 cl White wine
  • to taste EVO oil
  • to taste Salt and pepper

Preparation

  1. Let's start with the preparation of the base of our recipe by sautéing the chopped onion with a drizzle of oil, deglazing with the white wine and browning the bacon, previously roughly chopped. Later, we also combine the broad beans and peas, first we will have to blanch them and remove the peel. Let's dilute at this point with a little vegetable broth.

  2. In the meantime, put plenty of salted water in a saucepan and cook the Mezzi Canneroni Rigati di Gragnano PGI, draining them al dente and stirring them with the prepared sauce.

  3. The dish is ready! Serve it with a drizzle of oil and flakes of Pecorino, for an even more decisive flavour. All that remains is to savor this delicious dish!
