Tortiglioni with feta cheese, onion, peppers, olives and oregano

Let's start preparing this simple recipe to prepare a delicious first course of Tortiglioni!

Ingredients for 4 people

  • 300g PGI Gragnano Tortiglioni
  • 200g feta cheese
  • ½ red onion
  • 3 small peppers
  • 6 cherry tomatoes
  • 20 pitted black olives from Caiazzo
  • Oregano to taste
  • 3 tbs evoo
  • Salt and black pepper to taste

  1. First, finely chop an onion and sauté it over low heat in a pan with oil.
  2. Add the peppers cut into slices and season with a little salt. Next, wash and quarter the tomatoes and add them to the pan along with the peppers.
  3. In a large saucepan, bring lightly salted water to the boil and boil the Tortiglioni al dente.
    Drain them and transfer them to the pan with the sauce. Stir in a part of the feta cheese and the chopped olives, previously cut in half.
  4. To finish off the heat, sprinkle with the remaining crumbled feta cheese, a little oregano powder and a grind of black pepper. Serve and enjoy every bite!
