Vermicelloni with squid and aubergines

If you are ready to prepare a delicious dish of squid and aubergines, here is a simple and tasty recipe.


Ingredients for 4 people

  • 350 g PGI Gragnano Vermicelloni
  • 200 g Squid
  • 2 Aubergines
  • 100 g z Cherry tomatoes
  • to taste Parsley
  • to taste EVO oil
  • to taste Salt

Preparation

  1. Start by cleaning the squid and cutting them into strips about 3-4 mm thick. Then clean the aubergines, depriving them of the internal crumb and cut them into strips, salt and leave to rest for a while. Wash, dry well and fry them in boiling oil.
  2. In another pan, brown the garlic in the oil; add the parsley and the squid and cook for about 5 minutes, adding a few ladles of water. Add the fried aubergines to the squid sauce and mix everything together.
  3. In the meantime, cook the Vermicelloni di Gragnano PGI in plenty of salted water, drain them al dente and add them to the squid and aubergine sauce. Mix everything together and serve immediately.
